Peppercorn Sauce is a very tasty gastronomic cream sauce that is prepared with pure and neat peppercorn. There are different types of peppercorn like green, black, red and pink. You can use any one as per your wish for pepper sauce recipe. Peppercorn Sauce can be served with filet mignon, tenderloin cuts, lamb, and chicken and even with fish dishes like tuna too.


Peppercorn sauce recipe
My peppercorn sauce recipe is very quick and easy recipe. It can be prepared without cream. You can use milk and other fridge ingredients so that you can flog it up whenever you want to make it.
My own peppercorn sauce recipe is without cream as I use milk instead of cream. I found this recipe on Stu’s Food and its very tasty recipe. I am sure you will like it and it is completely auxiliary to gammon, beef, and chicken or even with steak.

Peppercorn Sauce Recipe Ingredients

Ingredients
·         30g butter
·         30g plain flour
·         175ml milk - I use skimmed but any type is fine
·         90ml chicken stock (or ½ chicken stock cube with 100ml water)
·         1 tbsp brandy
·         12g (4 tsp) black peppercorns - vary this according to how powerful you want your sauce to be
·         Salt as per your requirement


Method to Make Peppercorn Sauce Recipe

1.              Split the black peppercorns (12g) in a grinder and mortar (if you don't have grinder , put them in a plastic bag, swathe in a tea towel
2.              Melt butter 30g in a small sauce pan with low heat.
3.              Add the flour 30g when the butter is fully melted and mix it well to make sure that it is fully mixed with the butter.
4.              After that cook butter for a few minutes and then mix it with flour.
5.              After that put brandy (1 tbsp) and mix it for a few minutes with butter and flour.
6.              Steadily add the milk (175 ml) and mix it well with butter and flour that is already mixed well.
7.              When milk is mixed after that add the chicken stock and peppercorns and salt (as per your requirement). I usually add ¼ tsp of salt.
8.              Boil it until the sauce is reduced as per your wish and requirement.
9.              When sauce is cooked after that pours it bowl or any jug and without wasting time covers it with Cling film.
10.         Your peppercorn sauce recipe is ready to serve.
